Alcohol is the most available and most widely abused substance in the world. Beer alone is the world's most widely consumed alcoholic beverage. It is the third-most popular drink overall, after water and tea. It is believed by some to be the oldest fermented beverage. Recent research has begun to reveal alcoholism in its true light – a deficiency disease, often genetic in origin, involving the "neurotransmitters" that act as chemical messengers between brain neurons. Development of the "Cascade Theory" of neurotransmitter function, suggesting that these substances and their enzymes act in a cascade fashion (a kind of chain reaction), to produce feelings of well being. If the cascade becomes "unbalanced", cravings and addictions develop. Since neurotransmitters are made of amino acids, proper nutrition takes on great significance. While alcoholism is not hereditary, eighty percent of all alcoholics are born with a (genetic) deficiency in their opiod levels.
